Gluten Free Stuffed Jack-o'-lantern Bell Peppers
Halloween is such a fun holiday to kick off the fall season. Kids love carving pumpkins, trick-or-treating, and dressing up in costumes! However, if your child has Celiac disease, you may know that this holiday can be hard to control what candy your child will get in their bag of treats. Rosa's tip for staying safe on Halloween: "I let Solea trick-or-treat around the neighborhood, but when we get home, I have a bag of candy and treats that are certified gluten free and we trade this for the candy she got from other houses. That way she still gets to enjoy Halloween like other kids, but we are able to make sure she doesn't get sick!"
However, Halloween doesn't always have to be about the candy and sweets, so we put together this delicious meal that the whole family can enjoy! The recipe can be modified to fit your dietary needs, but be sure to stock up on Raised Gluten Free stuffing for the holidays!
2 tbs olive oil
1 cup onion, diced
2 cloves garlic, minced
1 lb ground turkey or crumbled tofu
½ tsp salt
½ tsp pepper
1 pack of Raised Gluten Free Stuffing Mix
5 orange bell peppers
1 ¼ cup of chicken or vegetable stock
Shredded mozzarella (optional)
Preheat oven to 350˚F
In a large skillet, heat the oil and cook onions and garlic for 3 minutes, or until they start to soften. Add the ground turkey (or mashed tofu) to the pan, followed by salt and pepper. Stir and cook for 3-4 minutes. Add Raised Gluten Free stuffing mix and chicken (or vegetable stock). Cook about 5 minutes. When the stuffing mix begins softening, remove from heat.
Cut the top off of the bell pepper (low enough that the stem remains attached) and remove the seeds. Save the top!
Carefully, carve out your desired jack-o-lantern face using a steak knife or paring knife. Repeat for the rest of the bell peppers.
Place carved bell peppers in a baking dish and spoon in the stuffing mixture. Top with mozzarella cheese if desired. Put the top of the bell pepper back on top.
Bake for 35 minutes.
