Vegan + Gluten-Free Basil Turmeric Soup

This soup packs rich and healthy savory flavors. A delicious light meal or starter.


In a food processor or blender, place:

- 1 peeled a thumb-size piece of turmeric

- 6 cloves of garlic

- 1 cup of basil

- 2 tablespoons of olive oil.

Purée into a paste.

In a medium-size pot, sauté over medium-low heat:

- 1 diced onion

- 5 sliced carrots

- 2 cups of sliced mushrooms

- 2 cups of green beans

When vegetables look vibrant and are tender, add 1 tablespoon of salt and the turmeric basil paste. Stir until the vegetables are well coated and sautéed for about five minutes.

Add 8 cups of broth and let the soup simmer for 30 to 45 minutes. Remove from heat and add a fresh cup of chopped basil.

When serving, garnish with a lemon slice to enhance the summer flavors.
