Vegan Meringue + Gluten Free Lemon Pie
Our lemon pie is a delicious choice for any occasion. It is light, refreshing, and zesty! Our lemon pie is gluten free, dairy free, and egg free. The lemon pie is meringue-less, so we made a video on how to make a great allergy-friendly alternative to meringue! A very simple recipe that pairs amazingly with the best gluten free lemon pie around. This vegan meringue is also known as aquafaba, which uses an interesting ingredient: garbanzo bean water! However, the meringue does not taste like beans if you follow the recipe below.
What you need:
1 can garbanzo bean water
1/2 tsp vanilla
1/2 tsp xanthan gum or cream of tartar
1/2 cup sugar
Instructions:
Set out your Raised Gluten Free lemon pie to start defrosting
Preheat oven to 375°
In a large mixing bowl, drain the water from the garbanzo beans
Add vanilla & mix until frothy
Add xanthan gum or cream of tartar
Slowly incorporate the sugar while mixing
Mix until mixture forms peaks
Spread meringue on pie & bake until slightly brown (keep a close eye, it browns quickly!)
