Easy Gluten-Free Enchiladas Recipe


Our Co-Founder, Rosa Dixon, is a busy woman, so easy gluten-free go-to meals are an absolute must in her home. Combining @sietefoods red enchilada sauce, @latortillafactory's Sonoma Teff Tortillas, beans, and cheese of choice, Rosa makes this quick and delicious Enchiladas dinner that her family loves.

Ingredients

Serves 4


1 pack of Sonoma Teff tortillas

1 jar of Seite red enchilada sauce

4 cup of black beans

2 cups of cheese or vegan cheese of your choice


Instructions

Preheat oven to 350

Heat tortillas for about 1 minute per side

Pour enchilada sauce in the pan to coat the bottom

Coat tortilla with sauce and fill with 1 cup of beans and 1/4 cup of cheese and repeat

Cover the top with remaining sauces and cheese and bake for 30 minutes.
