Gluten-Free Chocolate Chip Cookies

Today, we want to talk about one of the essential items in any pantry: Flour.

Flour is arguably an important ingredient in baked goods. Baking can be daunting enough as it is (even for people who don’t suffer from food allergies), and for those of us in the gluten-free crowd, baking can be a more complicated endeavor. It is both art and science—emphasizing science—meaning that every ingredient serves a specific purpose. Flour provides structure in baked goods. So, how do you substitute such an important base ingredient?

Fortunately, there are a lot of gluten-free flours out there, and it can be easy to get overwhelmed, especially if you've recently gone gluten-free. Don't panic! At the Raised Gluten Free bakery, all of our products are nut-free (except for coconut), so that means that ingredients like almond flour are off the table for us. However, a blend of rice, sorghum, and tapioca flour gives us the perfect consistency for our dough.

Follow the recipe below for Chocolate Chip Cookies, and substitute in any flour of your choice.

Rosa recommends making 3 different versions of the recipe, using Rice Flour, Sorghum, and Garbanzo Bean Flour. "This is how I start every cooking class," she says. "Each flour will produce very different tasting, and different looking cookies. It's a great way for people to learn the different properties of flours: their flavors, textures, and purposes." ”

Chocolate Chip Cookies Recipe

1 cup Gluten-Free Flour of your choice⁠

⅓ cup Chocolate Chips⁠

¼ cup White Sugar⁠

¼ cup Brown Sugar⁠

½ tsp Baking Soda⁠

¼ tsp Salt⁠

2 tbsp Milk (dairy or non-dairy)⁠

2 tbsp Oil⁠

¼ tsp vanilla extract⁠

Mix wet and dry ingredients separately. ⁠

Then, mix wet into dry and stir vigorously until the dry ingredients are fully saturated, and a dough has formed. ⁠

Refrigerate or freezer until firm. ⁠

Form dough into 1-inch balls and arrange on a baking sheet. ⁠

Baker for 10-12 min. @ 325 degrees⁠
